Peel, core, and quarter the pears.
Make a syrup by boiling together the red wine and sugar, with the lemon peel and spices.
Add the pears to the syrup and gently simmer for 10 to 15 minutes until the pears are still firm but cooked.
Place the pears in a deep storage dish.
